"Butter Tarts"

Crust

Ingredients

183⅓ g flour
5/12 tsp salt
1⅔ tbsp sugar
141⅔ g butter, very cold
50 ml cold water

Method

Food process / mix 183⅓ g flour, 1⅔ tbsp sugar, 5/12 tsp salt to combine
Add 141⅔ g butter, very cold
Process until butter is "pea-sized" (8 seconds)
Sprinkle 50 ml cold water
Process until moistened (8 seconds)
Knead on floured surface until cohesive
Knead into 15-cm disk
Refrigerate for 30 mins (up to 3 days)
Preheat oven to 190
Roll dough out to 3mm
Cut out 10cm circles
Place into muffin pan
Chill pan in the freezer while prepping filling

Filling

Ingredients

145 g dark brown sugar
62½ g maple syrup
50 g butter, melted and cooled
⅚ large egg
⅚ tsp apple cider vinegar
5/12 tsp salt
66⅔ g chopped pecans
2½ tbsp raisins (optional)

Method

Whisk together everything except pecans / raisins
Divide {pecans} / 2½ tbsp raisins (optional) amongst the crusts
Pour in the filling evenly
Bake for 25 minutes
Leave to cool on wire rack for a few mins
Loosen with a knife
Let cool completely
