1½ kg pork ribs, meaty 6 cloves garlic, minced 6 cm ginger, minced 1 onion, finely choppped (or shallots) 6 tbsp soy sauce 6 tbsp sake, or shaoxing rice wine 600 ml dashi stock, or chicken 2 star anise 1 cinnamon stick 1 orange peel
Method
Brown 1½ kg pork ribs, meaty and remove from pot Brown 6 cloves garlic, minced, 6 cm ginger, minced, and 1 onion, finely choppped (or shallots) Deglaze with 6 tbsp soy sauce and 6 tbsp sake, or shaoxing rice wine Add ribs and 600 ml dashi stock, or chicken Add 2 star anise, 1 cinnamon stick, 1 orange peel Braise, covered, on low heat for 2 hours Serve with white rice and microwaved pak choi
