Melt 3½ tbsp ghee, or butter Add 1 large onion, chopped, cook until golden Add 3 cloves garlic, minced and 1 tbsp ginger, grated, cook 1 min Stir in spices Add 5 tbsp tomato passata Add 400 ml chicken stock Add 1200 g meat, diced chicken / lamb Simmer for ~1h45m Add 250 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
