Melt 63 tbsp ghee, or butter Add 18 large onion, chopped, cook until golden Add 54 cloves garlic, minced and 18 tbsp ginger, grated, cook 1 min Stir in spices Add 90 tbsp tomato passata Add 7200 ml chicken stock Add 21600 g meat, diced chicken / lamb Simmer for ~1h45m Add 4500 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
