1 kg chicken thighs, deboned and cubed ½ large onion, grated 3½ tsp spice mix (above)
Combine ingredients and marinate for at least three hours Brown chicken in batches
3 red chilies, finely chopped ½ large onion, chopped 4 cloves garlic, minced 250 ml chicken stock 100 g roasted peanuts, unsalted and chopped 2 tsp sweet soy sauce 3 tsp soy sauce 1 can coconut milk 2 tbsp peanut butter 2 tbsp lime juice 3 lime leaves
Sauté ½ large onion, chopped until translucent Add 3 red chilies, finely chopped and 4 cloves garlic, minced, cook 2 mins Add remaining spice mix Blend with 250 ml chicken stock and half the 100 g roasted peanuts, unsalted and chopped Add other half of the 100 g roasted peanuts, unsalted and chopped Add 2 tsp sweet soy sauce, 3 tsp soy sauce, 1 can coconut milk and 2 tbsp peanut butter Add 3 lime leaves and browned chicken Simmer for 15 minutes Add 2 tbsp lime juice to taste Serve with cilantro, peanuts, and rice
