Ingredients
120 g pecans 250 g butter, room temperature 400 g sugar, mixed light brown and caster 1½ tsp vanilla extract 2 large eggs 560 g flour, self-raising 1 tsp salt 250 g dark chocolate
Method
Preheat oven to 170 degrees Roast 120 g pecans for 10 minutes. Chop once cooled Beat 250 g butter, room temperature and 400 g sugar, mixed light brown and caster until light and fluffy Add 1½ tsp vanilla extract and 2 large eggs Sift in 560 g flour, self-raising and 1 tsp salt Mix till combined Add nuts and 250 g dark chocolate Roll into golf-balls Bake at 200 degrees for 12 minutes, rotating halfway Cool for 10 minutes then transfer to wire rack
