Method

Chop 200 g dark chocolate
Melt 2/3rds in a bain Marie until 55 degrees
Remove from heat
Add remaining chocolate to cool to 28 degrees
Briefly heat again until 32 degrees
Pour over the cake and set in the fridge for 15 minutes
