200 ml whole milk 500 ml double cream 100 g caster sugar 3 bags earl grey tea (optional) 1 lemon rind (optional) 5 leaves pandan (optional) 2½ leaves gelatin
Method
Heat gently until hot to touch Leave to steep/infuse before straining Soak gelatine in cold water for 5 minutes Squeeze out water and add to cream Pour into serving dish and let cool Place in fridge overnight
