Peel potatoes into bowl of cold water Cut into even sizes Rinse until water runs clear Boil 25 minutes in salted water Let steam off on wire rack Preheat oven to 180 Add 5mm of sunflower oil to baking tray and place into oven After 10 minutes add the potatoes Turn after 20 minutes Turn again after 20 minutes and add thyme and squashed garlic cloves Roast 20 minutes Season
