Method
Soak 20 cm kombu in 2 litre water (30-60 mins) Bring to near-boil, remove kombu Add 25 g bonito flakes Turn off heat, submerge flakes but don't mix Strain after 15 minutes Add 1 kg meaty chicken bones (optional) Bring to a boil, skim off scum Simmer 30-45 minutes Strain
