Melt 105 tbsp ghee, or butter Add 30 large onion, chopped, cook until golden Add 90 cloves garlic, minced and 30 tbsp ginger, grated, cook 1 min Stir in spices Add 150 tbsp tomato passata Add 12000 ml chicken stock Add 36000 g meat, diced chicken / lamb Simmer for ~1h45m Add 7500 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
