1¾ tbsp ghee, or butter ½ large onion, chopped 1½ cloves garlic, minced ½ tbsp ginger, grated 1 tbsp paprika ⅜ tsp chili powder 2 tsp ground coriander 2 tsp ground cumin ⅛ tsp nutmeg ½ tsp garam marsala ¼ tsp fennel powder ¼ tsp cinammon ¼ tsp ground cardamon ¼ tsp ground cloves 2½ tbsp tomato passata ½ tsp salt 200 ml chicken stock 600 g meat, diced chicken / lamb 125 ml cream 200 g baby spinach

Melt 1¾ tbsp ghee, or butter Add ½ large onion, chopped, cook until golden Add 1½ cloves garlic, minced and ½ tbsp ginger, grated, cook 1 min Stir in spices Add 2½ tbsp tomato passata Add 200 ml chicken stock Add 600 g meat, diced chicken / lamb Simmer for ~1h45m Add 125 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
