Melt 7 tbsp ghee, or butter Add 2 large onion, chopped, cook until golden Add 6 cloves garlic, minced and 2 tbsp ginger, grated, cook 1 min Stir in spices Add 10 tbsp tomato passata Add 800 ml chicken stock Add 2400 g meat, diced chicken / lamb Simmer for ~1h45m Add 500 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
