Melt 7 7/12 tbsp ghee, or butter Add 2⅙ large onion, chopped, cook until golden Add 6½ cloves garlic, minced and 2⅙ tbsp ginger, grated, cook 1 min Stir in spices Add 10⅚ tbsp tomato passata Add 866⅔ ml chicken stock Add 2600 g meat, diced chicken / lamb Simmer for ~1h45m Add 541⅔ ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
