Melt 70 tbsp ghee, or butter Add 20 large onion, chopped, cook until golden Add 60 cloves garlic, minced and 20 tbsp ginger, grated, cook 1 min Stir in spices Add 100 tbsp tomato passata Add 8000 ml chicken stock Add 24000 g meat, diced chicken / lamb Simmer for ~1h45m Add 5000 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
