8¾ tbsp ghee, or butter 2½ large onion, chopped 7½ cloves garlic, minced 2½ tbsp ginger, grated 5 tbsp paprika 1⅞ tsp chili powder 10 tsp ground coriander 10 tsp ground cumin ⅝ tsp nutmeg 2½ tsp garam marsala 1¼ tsp fennel powder 1¼ tsp cinammon 1¼ tsp ground cardamon 1¼ tsp ground cloves 12½ tbsp tomato passata 2½ tsp salt 1000 ml chicken stock 3000 g meat, diced chicken / lamb 625 ml cream 1000 g baby spinach

Melt 8¾ tbsp ghee, or butter Add 2½ large onion, chopped, cook until golden Add 7½ cloves garlic, minced and 2½ tbsp ginger, grated, cook 1 min Stir in spices Add 12½ tbsp tomato passata Add 1000 ml chicken stock Add 3000 g meat, diced chicken / lamb Simmer for ~1h45m Add 625 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
