Melt 10½ tbsp ghee, or butter Add 3 large onion, chopped, cook until golden Add 9 cloves garlic, minced and 3 tbsp ginger, grated, cook 1 min Stir in spices Add 15 tbsp tomato passata Add 1200 ml chicken stock Add 3600 g meat, diced chicken / lamb Simmer for ~1h45m Add 750 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
