Melt 12¼ tbsp ghee, or butter Add 3½ large onion, chopped, cook until golden Add 10½ cloves garlic, minced and 3½ tbsp ginger, grated, cook 1 min Stir in spices Add 17½ tbsp tomato passata Add 1400 ml chicken stock Add 4200 g meat, diced chicken / lamb Simmer for ~1h45m Add 875 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
