Melt 14 tbsp ghee, or butter Add 4 large onion, chopped, cook until golden Add 12 cloves garlic, minced and 4 tbsp ginger, grated, cook 1 min Stir in spices Add 20 tbsp tomato passata Add 1600 ml chicken stock Add 4800 g meat, diced chicken / lamb Simmer for ~1h45m Add 1000 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
