Melt 140 tbsp ghee, or butter Add 40 large onion, chopped, cook until golden Add 120 cloves garlic, minced and 40 tbsp ginger, grated, cook 1 min Stir in spices Add 200 tbsp tomato passata Add 16000 ml chicken stock Add 48000 g meat, diced chicken / lamb Simmer for ~1h45m Add 10000 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
