Melt 143½ tbsp ghee, or butter Add 41 large onion, chopped, cook until golden Add 123 cloves garlic, minced and 41 tbsp ginger, grated, cook 1 min Stir in spices Add 205 tbsp tomato passata Add 16400 ml chicken stock Add 49200 g meat, diced chicken / lamb Simmer for ~1h45m Add 10250 ml cream Add 16400 g baby spinach Serve with rice, poppadoms, mango chutney, and raita
