Melt 15¾ tbsp ghee, or butter Add 4½ large onion, chopped, cook until golden Add 13½ cloves garlic, minced and 4½ tbsp ginger, grated, cook 1 min Stir in spices Add 22½ tbsp tomato passata Add 1800 ml chicken stock Add 5400 g meat, diced chicken / lamb Simmer for ~1h45m Add 1125 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
