Melt 157½ tbsp ghee, or butter Add 45 large onion, chopped, cook until golden Add 135 cloves garlic, minced and 45 tbsp ginger, grated, cook 1 min Stir in spices Add 225 tbsp tomato passata Add 18000 ml chicken stock Add 54000 g meat, diced chicken / lamb Simmer for ~1h45m Add 11250 ml cream Add 18000 g baby spinach Serve with rice, poppadoms, mango chutney, and raita
