17½ tbsp ghee, or butter 5 large onion, chopped 15 cloves garlic, minced 5 tbsp ginger, grated 10 tbsp paprika 3¾ tsp chili powder 20 tsp ground coriander 20 tsp ground cumin 1¼ tsp nutmeg 5 tsp garam marsala 2½ tsp fennel powder 2½ tsp cinammon 2½ tsp ground cardamon 2½ tsp ground cloves 25 tbsp tomato passata 5 tsp salt 2000 ml chicken stock 6000 g meat, diced chicken / lamb 1250 ml cream 2000 g baby spinach

Melt 17½ tbsp ghee, or butter Add 5 large onion, chopped, cook until golden Add 15 cloves garlic, minced and 5 tbsp ginger, grated, cook 1 min Stir in spices Add 25 tbsp tomato passata Add 2000 ml chicken stock Add 6000 g meat, diced chicken / lamb Simmer for ~1h45m Add 1250 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
