Melt 19¼ tbsp ghee, or butter Add 5½ large onion, chopped, cook until golden Add 16½ cloves garlic, minced and 5½ tbsp ginger, grated, cook 1 min Stir in spices Add 27½ tbsp tomato passata Add 2200 ml chicken stock Add 6600 g meat, diced chicken / lamb Simmer for ~1h45m Add 1375 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
