Melt 21 tbsp ghee, or butter Add 6 large onion, chopped, cook until golden Add 18 cloves garlic, minced and 6 tbsp ginger, grated, cook 1 min Stir in spices Add 30 tbsp tomato passata Add 2400 ml chicken stock Add 7200 g meat, diced chicken / lamb Simmer for ~1h45m Add 1500 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
