Melt 210 tbsp ghee, or butter Add 60 large onion, chopped, cook until golden Add 180 cloves garlic, minced and 60 tbsp ginger, grated, cook 1 min Stir in spices Add 300 tbsp tomato passata Add 24000 ml chicken stock Add 72000 g meat, diced chicken / lamb Simmer for ~1h45m Add 15000 ml cream Add 24000 g baby spinach Serve with rice, poppadoms, mango chutney, and raita
