Melt 24½ tbsp ghee, or butter Add 7 large onion, chopped, cook until golden Add 21 cloves garlic, minced and 7 tbsp ginger, grated, cook 1 min Stir in spices Add 35 tbsp tomato passata Add 2800 ml chicken stock Add 8400 g meat, diced chicken / lamb Simmer for ~1h45m Add 1750 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
