Melt 245 tbsp ghee, or butter Add 70 large onion, chopped, cook until golden Add 210 cloves garlic, minced and 70 tbsp ginger, grated, cook 1 min Stir in spices Add 350 tbsp tomato passata Add 28000 ml chicken stock Add 84000 g meat, diced chicken / lamb Simmer for ~1h45m Add 17500 ml cream Add 28000 g baby spinach Serve with rice, poppadoms, mango chutney, and raita
