Melt 26¼ tbsp ghee, or butter Add 7½ large onion, chopped, cook until golden Add 22½ cloves garlic, minced and 7½ tbsp ginger, grated, cook 1 min Stir in spices Add 37½ tbsp tomato passata Add 3000 ml chicken stock Add 9000 g meat, diced chicken / lamb Simmer for ~1h45m Add 1875 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
