Melt 28 tbsp ghee, or butter Add 8 large onion, chopped, cook until golden Add 24 cloves garlic, minced and 8 tbsp ginger, grated, cook 1 min Stir in spices Add 40 tbsp tomato passata Add 3200 ml chicken stock Add 9600 g meat, diced chicken / lamb Simmer for ~1h45m Add 2000 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
