Melt 31½ tbsp ghee, or butter Add 9 large onion, chopped, cook until golden Add 27 cloves garlic, minced and 9 tbsp ginger, grated, cook 1 min Stir in spices Add 45 tbsp tomato passata Add 3600 ml chicken stock Add 10800 g meat, diced chicken / lamb Simmer for ~1h45m Add 2250 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
