Melt 35 tbsp ghee, or butter Add 10 large onion, chopped, cook until golden Add 30 cloves garlic, minced and 10 tbsp ginger, grated, cook 1 min Stir in spices Add 50 tbsp tomato passata Add 4000 ml chicken stock Add 12000 g meat, diced chicken / lamb Simmer for ~1h45m Add 2500 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
