Melt 40¼ tbsp ghee, or butter Add 11½ large onion, chopped, cook until golden Add 34½ cloves garlic, minced and 11½ tbsp ginger, grated, cook 1 min Stir in spices Add 57½ tbsp tomato passata Add 4600 ml chicken stock Add 13800 g meat, diced chicken / lamb Simmer for ~1h45m Add 2875 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
