Melt 5¼ tbsp ghee, or butter Add 1½ large onion, chopped, cook until golden Add 4½ cloves garlic, minced and 1½ tbsp ginger, grated, cook 1 min Stir in spices Add 7½ tbsp tomato passata Add 600 ml chicken stock Add 1800 g meat, diced chicken / lamb Simmer for ~1h45m Add 375 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
