Melt 52½ tbsp ghee, or butter Add 15 large onion, chopped, cook until golden Add 45 cloves garlic, minced and 15 tbsp ginger, grated, cook 1 min Stir in spices Add 75 tbsp tomato passata Add 6000 ml chicken stock Add 18000 g meat, diced chicken / lamb Simmer for ~1h45m Add 3750 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
