Melt 56 tbsp ghee, or butter Add 16 large onion, chopped, cook until golden Add 48 cloves garlic, minced and 16 tbsp ginger, grated, cook 1 min Stir in spices Add 80 tbsp tomato passata Add 6400 ml chicken stock Add 19200 g meat, diced chicken / lamb Simmer for ~1h45m Add 4000 ml cream Add {spinach} Serve with rice, poppadoms, mango chutney, and raita
